1 Basic Cabbage Soup

Ingredients:

  • 6 large green onions (1 bunch)
  • 2 gloves of garlic, crushed
  • 2 green peppers
  • 1 or 2 cans of tomatoes (14.5 ounce size, diced or whole)
  • 1 bunch celery, sliced
  • 1/2 head cabbage, chopped
  • 1 package dried onion soup mix
  • 6 cups light chicken or vegetable broth
  • Season to taste with salt, pepper, parsley,

Preparation:

Heat a tablespoon of olive oil in a thick based pan and add the onions and garlic, cook until soft, add the chopped cabbage and stir thoroughly and add onion soup mix, add the cans of tomato and stock, bring to the boil and simmer gently until cooked.  Check for seasoning.

2. Spicy Cabbage Soup

Ingredients:

  • 1 can beef broth
  • 3/4 medium head cabbage, chopped
  • 2 white onions, chopped
  • 1 green pepper, chopped
  • 1 mild pepperoncini, finely chopped
  • 1/2 cup chopped celery
  • 4 cups water
  • l large can tomatoes, chopped, with juice
  • 1 clove garlic, chopped
  • 2 dashes hot sauce

Preparation:

In a pan heat some olive oil and cook the chopped onion, garlic, chopped peppers and celery until soft.  Add the water and beef broth, bring mixture to boil over medium-high heat; turn down to low. Cook gently until ingredients are tender, about 1 1/2 hours. Add chopped tomatoes and juice. Add more water if needed.
Serves 4 to 6

3. Original Cabbage Soup

Ingredients:

  • 1 head cabbage, finely chopped
  • 6 medium onions, chopped
  • 6 green onions, chopped,
  • 6 carrots, peeled and chopped
  • 2 red peppers, diced
  • 2 cloves of garlic, crushed
  • 3 large tomatoes, skinned and chopped
  • 5 stalks celery, sliced
  • 4 oz brown rice
  • salt and freshly-ground black pepper
  • olive oil

Preparation:

Heat olive oil in a pan and add the vegetables, cook gently for a few minutes and then add enough cold water to cover. Bring the water to boil. Lower heat and then simmer uncovered for ten minutes.  Add the rice, cover, and then simmer on low heat until the vegetables and rice are soft. This should take about 15 minutes.  Season to taste.

4. Cabbage Soup with Zucchini

Ingredients:

  • 1/2 medium head of cabbage, diced
  • 3 small zucchini,peeled and diced
  • 1 large clove garlic, crushed
  • 1/4 tsp dried basil
  • 1/2 tsp black pepper

  • 2 tbsp tomato paste
  • 3 onions, chopped

Heat the oil in a pan and add all the vegetables, stir thoroughly, add the tomatoes, tomato paste, stock and Worcester sauce.  Cover and cook on low for 10 – 15 minutes.

  • 2 cups cabbage, shredded
  • 1 cups leeks, chopped
  • 1/2 cup carrots, diced

  • One Head of Cabbage
  • One packet Smoked or Polish Sausage
  • 1 lb hot spicy sausage such as Chorizo
  • 1 (16 oz).  Chopped Tomatoes

  • 2 Medium Onions, chopped
  • 4 Tablespoons Chili Powder
  • 1 teaspoon Garlic
  • Salt to taste

Preparation:

Chop onions and cabbage and boil in a thick based pan 1/4 filled with water.  Lightly fry the spicy sausage in a little oil, add to the tomatoes, tomato sauce and spices to cabbage and onions.  Cook on medium for 30 minutes.  Add bite size pieces of smoked or polish sausage cook for 15 more minutes.

Ingredients:

  • 1 head of cabbage, coarsely chopped
  • 1 can of tomatoes chopped
  • 2-3 handfulls of fresh green beans chopped small
  • 1 bunch of swiss chard- chopped coarsely

  • 2 Tablespoons olive oil

8. Sweet Russian Cabbage Soup

Ingredients:

  • 1 1/2 pounds ground lean beef
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 4 cubes beef bouillon
  • 2 medium carrots, shredded
  • 1 onion, chopped
  • 2 tablespoons white vinegar
  • 1/2 cup white sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 2 quarts water, divided
  • 3 cloves garlic, finely chopped
  • 1 head cabbage, cored and cut into wedges

Preparation:

Crumble the ground beef into a large pot. Add the diced tomatoes, tomato sauce, beef bouillon cubes, carrots, onion, vinegar, sugar, salt and pepper. Pour in 1 quart of water, and bring to a boil. Stir to break up the beef while heating. Once the soup comes to a boil, cover and simmer for 30 minutes over low heat.

Pour in another quart of water, and return to a slow boil. Add garlic and cabbage. Simmer for 25 minutes, until cabbage is tender. Ladle into soup bowls to serve.

9. Tomato-Red Cabbage Soup

Ingredients:

  • 1 t vegetable or olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic, chopped
  • 250 g (3 1/2 cups) shredded red cabbage
  • 650 g (3 1/3 cups) chopped fresh tomatoes
  • 1 T fresh oregano, chopped
  • 1 sprig fresh rosemary, chopped
  • 1 T say sauce
  • 2 T tomato paste
  • 1000 ml (4 cups) vegetable broth

Preparation:

In a large saucepan heat oil. Add onions and fry for five minutes over medium heat. Add garlic and shredded cabbage. Fry for 10 minutes until onions and cabbage are lightly caramelized. Add remaining ingredients except for parsley.

  • ¾ teaspoon Thai red curry paste
  • 5 cups vegetable broth
  • 1 teaspoon finely grated lime peel

  • 4 C. potatoes

  • 6 cups boiling water & chicken buillon to match water amount or 6 cups chicken broth
  • 1/2 head of cabbage
  • 4-5 cups cubed ham
  • 2 large carrots sliced

  • cut onion…amount is up to you..I like onion and used about 2/3 cup.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground sirloin
  • 1 (1-pound) bag classic coleslaw mix
  • 1 large onion

Ingredients:

  • 1 lb ground beef
  • 4 tbls of Caraway, crushed in palm of your hand
  • 1 32oz can tomato Juice
  • 1 small cabbage, sliced thin
  • Pepper to taste
  • (no need for additional salt due to high sodium in the tomato juice)
  • Could also add cubed potatoes to the soup for an even more hearty dish.

Preparation:

Fully brown ground beef. Add Caraway seeds in the dry pot with the beef (before juice). Add tomato juice all at once. Add cabbage slices. Stir to mix together. (add potatoes at this point – watch that it doesn’t become too thick). Let simmer until cabbage is totally wilted. Can be slow cooked, or use a crock pot if more water is added.
